Pelatihan Pembuatan VCO sebagai Pangan Fungsional di Nagari Aur Malintang Selatan
Abstract
Indonesia has significant potential in the plantation sector, particularly in coconut, which holds economic, social, and cultural value. West Sumatra, as one of the largest coconut-producing regions, has great opportunities for developing derivative products such as Virgin Coconut Oil (VCO). VCO is a pure coconut oil produced without high-temperature heating or chemical additives, making it highly beneficial for health. This study examines VCO production training for the community in Nagari III Koto Aur Malintang Selatan as part of a community service program by the KKN team of Universitas Negeri Padang. Using a qualitative descriptive method with observations and interviews, the activities included socialization, VCO production practice, and oil harvesting and filtration. The results show that the community effectively understood the VCO production process, yielding an initial production of approximately 1 liter. This training enhances the community’s skills in processing coconut into high-value economic products. The sustainability of this program is expected to create new coconut-based business opportunities. Further assistance and marketing strategies are needed to develop VCO production and make it more competitive in the market.
